The whole house smells like cookies and mulled wine, everything is decorated and it really feels like Christmas isn’t far any more. For me, Christmas is the best holiday of the year and I already look forward in September to celebrate it with baking cookies and watching Christmas movies.
The only thing I don’t like about Christmas is all the stress that comes with it so that we can’t really enjoy the time. And when I hear people saying that it is so complicated to get all those presents and to visit all the relatives, I think it’s really sad. Christmas doesn’t mean buying perfect presents, but to give others joy.
This year I already started in November with preparing Christmas presents in my kitchen since this year, I only give presents to my family and friends that are completely homemade. Plus, I didn’t have to run around in malls and shops to get them. It is so relaxing to make time for cooking, baking, mixing and wrapping presents while listening to some good old Christmas music.
One of these presents is my Christmas Granola. It combines everything you need for a healthy and Christmassy granola – oats, quinoa, nuts, gingerbread spice and cranberries.
Serves: 500 g
100g rolled oats
90 g puffed quinoa
90 g puffed amaranth
150 g nuts (hazelnuts, almonds, cashews, pecans, peanuts …)
80 g dried cranberries
1 tablespoon honey
1 tablespoon coconut oil
A pinch ground vanilla
1,5 teaspoons gingerbread spice
Roast the nuts in a well coated pan until they are golden. Then, melt the coconut oil in a pan, add oats, amaranth, puffed quinoa and honey and stir well. Roast at medium heat until the granola is nice and crunchy. Finally add gingerbread spice and vanilla to the mixture and spread it out on a baking sheet to let it cool down.
Presented in a Christmassy box or jar, this granola mixture is the perfect present for all those friends who love granola and have to hurry in the morning, but still appreciate a healthy and balanced breakfast to start the day.
